Extremely hot temperatures call for the Digi-Sense 08467-64 Type-K High-Temperature Ceramic Fiber-Insulated Probe with Mini Connector. It's the ceramic fiber insulation that allows this probe to perform efficiently in temps as high as 2,000°F (1,093°C).
